I’ve been making these cute little rum cupcakes, and they are simply delicious! Why innocent? I use rum flavouring instead of alcohol 🙂
Makes 12 innocent rum cupcakes
6 tbsp melted butter or coconut oil
200g Soya yoghurt
Stevia to taste (start with a little bit!)
1 tsp baking powder or 6 tabs bullrichs vital
1 tsp rum flavouring
130g ground almonds
Start by whipping the eggs until they’re frothy, creamy and have tripled in size.
Add the butter or coconut oil, soya yoghurt, stevia, rum flavouring and bullrichs vital tabs (dissolved in some water), and give everything a good stir.
Finally add the ground almonds and mix everything together.
Now spoon the mixture into the cupcake forms, and bake in the preheated oven at 150 degrees for approx. 35 minutes.
Then last but not least, enjoy! Easy 🙂
