Do you like cashews? Do you like shortbread? Then you will LOVE these 😀 Why not keep it a bit healthier this year, and leave the sugar in the cupboard? Don’t worry, they will still be yummy.
Ingredients
For the biscuits:
1 1/2 jars of cashew butter
2 eggs
Stevia to taste
Toppings (optional):
2 tsp cocoa
Salt
Chilli
Frozen blueberries
Method
Preheat the oven to 180 degrees C.
Mix the cashew butter and eggs until you have a smooth doughy consistency that you can form balls with.
Add stevia to taste.
Now it’s up to you how you want to season these bad boys 😜
If you like them plain, then form small balls about the size of a £1 coin and place on a baking tray (lined with baking parchment).
If using chocolate, add the cocoa and some more stevia (the cocoa will be slightly bitter if using 100% cocoa) before forming the balls.
Then squash the balls with a fork to form round, flat, biscuits.
You can sprinkle these with a little salt (sooooo yummy!) or another topping of choice.
Pop in the oven and bake for 10 minutes until firm but not too well done.
And voila, all done!
